Volume Owner nobody / nogroup?

I am building up to converting my WHS to a FreeNAS machine. Right now I am trying to build a functioning VM with Plex, Couchpotato, Sonarr and Sabnzbd. One of the guides that I have been reading suggests setting the Volume owner user to "nobody" and the group to "nogroup". Then setting permissions at the Dataset level.

1. Why set the volume owner to nobody?
2. If setting permission at Dataset level do I need to create an Admin user with full access (or continue to use root)?
