Hello :)
I'll build a NAS for my brother, it will be used by 3-4 people working directly on it for video editing, here is what I was thinking about:
CPU: Ryzen 7 3700X https://www.ldlc.com/fiche/PB00273565.html
MB: Gigabyte Aorus X570 pro https://www.ldlc.com/fiche/PB00273912.html (accepts ECC)
Case: silverstone 2u https://www.ldlc.com/fiche/PB00189319.html
RAM: 4 * 32 GB ECC crucial https://www.ldlc.com/fiche/PB00249585.html
HDD: 12 * 12 TB Seagate Ironwolf https://www.ldlc.com/fiche/PB00236817.html
Boot device: Corsair M2 120 GB https://www.ldlc.com/fiche/PB00251250.html
Network: dual 10 Gbe https://www.ldlc.com/fiche/PB00251101.html
Power supply: 550 redondant platinium https://www.amazon.fr/Win-connecteur-dalimentation-redondant-Platinum/dp/B07GTP4Y7G
Extra needed: 2 * mini SAS cards https://www.ldlc.com/fiche/PB00191677.html
Bonus: L2ARC M2 drive 512 GB https://www.ldlc.com/fiche/PB00250728.html (might try without maybe and see how it goes)
So, I've never build using this kind of case with hot swap drives so this is my main concern. Also, for the L2ARC, it's because there will be at least 3 people working on it on big project with a lot of files, so I thought it might release so work on the HDDs, but not sure if necessary or not.
Also, ryzen because as far as I could see, it seems to work properly now with Freenas, and it's pretty awesome. Just I can't put more than 128 GB of RAM on this MB, that's the downside (too bad they haven't released new MB for ThreadRipper 3 yet, I think they will accept max 256 GB).
The plan is to have 2 * 6 HDD raid z2 into one big pool.
What do you guys think? Thank you! :)

It would be 16 * 8 TB drives, with 2 raid z2 pools of 8 drives each. Seams like it would be cheaper, and no limit on the RAM part, easy to add more in the future.
