NFS User to read all files

I'm trying to create a user that has access to every folder / share / file in TANK (volume)

I am building a VM to run backups and need to be able to access the important directories over NFS to back them up.
When I map with NFS, I can browse to the top level directory within tank but if I cd in to a folder its blank.

What do I need to do to allow the user "backup" access over NFS to read every file?

What utility are you using for the backup?

that would be rclone and duplicati
