TrueNAS Scale VM Host Passthrough and General Boot/Install Issues

I am having issues with TrueNAS Scale VMs failing to properly passthrough the host CPU (when I set the CPU model to Host Passthrough). I have a Core i5-12600K with VT-x enabled, but if I create a VM and check the UEFI interface, it lists the CPU as a "Standard PC (i440FX + PIIX, 1996)".
I am uncertain if this is related, but I have had a couple issues preventing me from being able to use TrueNAS Scale VMs at all:

1. When trying to run Ubuntu 22.04 Server on a VM, I select to try and install from GRUB, but then the serial console goes blank and never recovers.
2. When trying to run Clear Linux 40430 on a VM GRUB is able to boot Clear Linux, but when I run clr-installer, the Go Script always fails due to memory errors:
   panic: runtime error: invalid memory address or nil pointer dereference[signal SIGSEGV: segmentation violation code=0x1 addr=0x0 pc=0x559fae39c1a5]

I was wondering if anyone might have experience with such things? Thanks!
