Can it be removed individually

your pool is damaged.
you must have all vdevs online.
you cannot remove a RAIDz vdev. you need to get at least 3 disks from raidz1-1 connected to access this pool.

your pool is mis-constructed; you need to destroy it and make it again, and then restore from backups, or start from scratch if you have no backups.
do not mix SSD and HDD disks in the way you have.
if you want to use SSD's in the same pool as HDDs, the options are to use the special devices, such are metatdata/L2ARC

additionally, raidz1 is discouraged.

totally possible. I don't actually know the difference. simplified seems....simpler :|. it was a stab in the dark.

No, I'm sorry. As far as I know you can only try (very expensive) recovery services.

both vdevs must be online. if raidz1-1 is already formatted, the pool is destroyed.
if raidz1-1 doesnt exist, then raidz1-0 no longer holds any useful data. zfs data is stored striped across each vdev in the pool.

for example: mymovie.mp4 50GB might have 25GB on raidz1-0 and 25GB on raidz1-1.
if either of those vdevs is unavailable, the file is lost. this applies to the entire pool.

there are paid services to recover data, but these are in the many thousands of dollars range, and might still find nothing reconstruct-able.

you need to do some serious reading before you consider TrueNAS again. something like unraid might be better, as they are designed for the less technical and to be more flexible.
also: BACKUPS. RAID(z) is not a backup.

TrueNAS is a one trick pony, but the trick it does is VERY good, as long as you set it up correctly.
