Using unix ACLs for compatibility/ease, is it possible to assign permissions to a dataset that allows say RW to one group but RO to another?

Right now I can only figure out how to assign one group to a dataset which then obviously has one set of permissions.

Or is the solution as simple as to use guest/non member for the RO permissions? Is there a 'better' way?

Is this a CIFS share? If so, then I believe you can use share definition access controls to achieve this.
