G4560 FreeNAS + plex and other

Hi,

I am looking at setting up a FreeNAS to replace a single 2tb external drive connected to always on laptop
Since I have a few devices doing different things I want to consolidate them while doubling my storage and adding resilience.

The plugins I am looking at running at very high load
1 video stream via CIFS
Plex Plugin/jail (1 user max 1080p transcoding)
Sonarr Plugin/jail
Deluge (Jail) or transmission plugin
Jackett (Jail)

Possible extra
small docuwiki for self use

Specs I am looking at
Intel G4560 (wanting the low tdp for always on)
ASRock B250M Pro (can expand to 6 drives) / might look at a miniATX if I can find one with 6 sata ports
16GB ram DD4
2 4tb drives (raid 1) or 3 4tb drives (raidz)
400W PSU

I really like the G4560 however it is my one worry for how much I am looking at running on it, even though only plex should be demanding.
Other option is waiting a few months for the i3-8100.

Is it better to put the plugins in a jail?
Any thoughts or concerns on the specs?
