Just wondering if its possible to convert a RAID 1 ZFS to a RAID 10 ZFS.

Example.
A working raid 1 3TBx2 ZFS nas.

Then I get two more 3TB drive at some point in the future.

Can I make a empty RAID 1 ZFS with the new drives then Stripe those two with the first pair of drive and not loose any data.

OLD raid 1 + new raid 1 pair in a stripe = raid 10. new capacity is 6TB.

I'll assume that when you say RAID1 ZFS you mean a ZFS mirror, and by RAID10 you mean "striped mirrors".

If so, the answer is, "Yes, you can extend a volume made of one mirror vdev by adding another mirror vdev to it." In the Volume Manager the term "volume" is used both for pools and for vdevs, so that can be a bit confusing, but the key is to select the existing volume (pool) in the "Volume to extend" dropdown when adding the new mirror.

You should probably read this guide.
