Hi all, Before we start I would first of all like to say thanks to this Freenas community for a great job well done....:)
I have over a Tera of movies and photos that I would like to keep safe, this size is growing on a daily basis so I went out and bought 6x3tera wd red hdd.
As these are family photos I have decided to go zfs for more safety.
What is the best way to set up ie:RAID-Z1, RAID-Z2 or RAID-Z3, Stripe or maybe Mirror?

Not this.

Only you can decide what "best" means for you in terms of trading performance vs capacity vs reliability. Do read that guide, the knowledge will serve you well.

I expect you'll end up with the ever-popular 6-disk RAIDZ2 single vdev layout.

I'd do RAIDZ2 with the following caveats:
  • Purchase a system that supports ECC RAM.
  • ZFS is not a substitute for having a backup.
  • If you only have one copy of your data (even if it's on a FreeNAS server), you have no backup.
  • The fates do not look kindly on people who do not backup their data.
