How do I setup FreeNAS so that I can access the same files from both OSX and Win7

That's very neat - I hadn't seen the veto commands before. Thanks Hervon, that's made one of my more retarded Windows programs a lot happier!

If Doug wants to use AFP for the Macs then just share the same folder twice, once with AFP and once with CIFS. Hervon's link is useful on the CIFS share to hide the Mac-specific extra files that Windows doesn't need to care about.
