Replacing disk for raid 0

I have a HPe G8, because of the controller all disks are separate raid 0s. I have 14 disks in the pool.
What is the procedure for replacing it and rebuilding raid in TrueNAS?

I swapped out the disk physically and put a new one in.
In HPe raid menu, the old logical drive, raid 0, still seem to be listed. Should I delete it, and create it again with the new disk?

In TrueNAS, I can select replace disk on the one that says REMOVED, but the new one does not show up.

It's unclear. You're expecting us to make guesses about how the HPe RAID works. You can try that, but no promises it will work.

The best solution would be to evacuate all your data off the array, and then replace the RAID controller with a proper HBA (I'm pretty sure HP offers one). Then moving forward you won't have this sort of problem, and your data won't be at unknown risk due to the improper use of a RAID controller.
