I have 3x 2TB WD Disks WD20EARS.
Can the corrupt WD20EARS disk be replaced with a WD30EZRX 3TB disc?

Yes, you can do this

Just note: The extra space in the new drive won't be available until all drives in the vdev or mirror are at least that size.
