Is there a way to make one share, and let some users read and write anything , while other are read only ?

The answer to your question is yes. In fact, there are multiple ways to do it. Here's one:

Put the users you want to have read/write access into a group and make that the group owner of the dataset. Enable read and write access for "group". Then give "other" (everyone who is a user on the system, but isn't part of the owner group) read only access. Done.

If you don't understand unix permissions, you should really read up on them so you know what's going on.
