Need to just remove an unneeded drive from zpool

Hello, I need to just remove a drive from a zpool. I have a 1.5Tb and 750GB in a pool, they are in stripe. There is only 1TiB used on the pool.
I have (2) 3TB drives and I would like to replace both of them but in mirorred.
Is there way that I can just remove the disk from the pool?
That would be the easiest way. Then I would replace the 1.5TB with a 3TB and then add the other 3TB in mirrored. Or is there any other way?

That's not possible. Just create your new mirror (2x 3 TB) and move over the files.

Ok. Can I replace the two drives with the 3TB drives then make it mirrored? Or can u not change it from stripe to mirrored?

You cannot change from stripe to mirrored, see also here: RAID 0 to RAID 1.

Ok so If I were to recreate the pool how can I move all of my plugins with having to recreate and configure them? And what is the best way to move the files?
And sorry for asking so much I don't know much about freenas.
