What happens if I remove all the drives from my freenas box and just put them into another one? Is there a way this can be done and keep data intact?

Pools are self-contained, so that is possible.

Generally speaking, you have to watch out for encryption and other gotchas, but yes, in general, your pool can be re-imported on a new FreeNAS box.

You aren't giving enough info to really give an educated answer. In practice you can move the drives to a new setup and you should be able to import your volume. However, without more info, like drive controller, mobo, and so on, we can only assume you have done your homework before taking the risk to your data.
