I now have a 10 bay r620 sitting in my rack:
  • 2x e5-2620 v2
  • 32gb ddr3
  • chelsio t420-cr
  • h310 mini mono (to be replaced with a full pcie h310 that I will flash to use IT mode for the internal disks)
Once I figure out the cabling for the new h310 card, I plan to get some SSDs to put in the front bays to use as an iscsi / vSAN or something similar, for my two esxi hosts.

Are there any recommendations for what to look for in SSDs in this use case?

iSCSI, sure! vSAN, not so much... vSAN is baked into ESXi and the whole point is to not have a physical SAN, hence (virtual)SAN.

Anything that's not garbage. Most people recommend Samsung or Intel drives. Unless your backing an active database with 100s of users or 20+ active VMs, anything will be blazing fast compared to HDDs.
