I was wondering if I can increase the pool size by replacing each disk with a larger disk.
In other words, if I have 6 x 1TB disks on a ZFS RaidZ2 array filled with 3TB of data, can I pull one disk and replace it with a larger disk, than rebuild the array, pull another disk and rebuild the array, etc.? If yes, up to how many disks I can insert simultaneously?

I believe this will work. You won't see the size increase until all 6 disks have been replaced. Also, as you noted, you'll have to resilver after each disk replacement, which will take a while (depends on how much data you have stored, but if you're considering doing this I'm assuming you're close to full on your current 6x1TB setup). I think you could technically do up to 2 drives at a time, but that would defeat the purpose of your RAIDZ2. You will want to do this one disk at a time--if a 2nd drive fails during resilvering you'll still be ok (if a 3rd goes, you lose all data).
