How can I use separate IPs for the apps?

In the node IP field I only have 0.0.0.0 (which gives me 172.16.42.25, the host IP) and the host IP, 172.16.42.25.

How can I specify a separate IP? I have added an additional IP to the host interface, but I still don't see it as a choice here.

What happens when I run two apps that use the same port range? How can I assign a static (or DHCP) IP to a specific app so there will not be a conflict?

Well, due to other problems I was having where I can no longer get a Plex docker to deploy/start, I rebooted the server.

After the reboot, I now see both IPs available to select in the Apps settings. So it seems that the Apps settings just isn't pulling the available IPs on the interfaces when you open the settings panel.

Unfortunately Plex still won't start anymore, even after deleting it and adding it again. Sigh.
