how to find bottlenecks?

Sorry for a newb question, but whats the best way to test and monitor performance and bottlenecks? Just setup a pair of freenas's running NFS to ESXI and Xencenter servers (one to each). The one to ESXI connecting using GB cat6 is seeing about 600Mb network traffic and memory maxed out. I'm new to this and not sure what to look for. I have a ton of spare server parts and looking to maximize performance with onhand hardware before replacing hardware.

Dell R710
24GB ram
Quad 2Ghz E5504
4x2TB Hitachi Sata raid10

Also do these have NIC teaming or load balancing?
