sorry for the late answer I was quite busy with work lately.
Anyway: Thanks for all the tips! I tried to follow as much as I could and looked around for discounted hardware. I finally found a good deal where I had discount on a repackaged MB+Mem. The config is probably overkill but the deal mad it worth it. Hopefully it's still good hardware for the application intended :
1 x Kingston Value RAM (4x, 32Go, DDR4-2133, DIMM 288) (5679701)
4 x WD Red (8To, 3.5", NAS, Storagesysteme) (5710530)
1 x Seasonic Platinum 400 Fanless (400W) (399495)
1 x WD Green (240Go, M.2 2280) (5988455)
1 x Fractal Define Mini (Micro Tower) (255372)
1 x Supermicro X10SDV-6C-TLN4F: Mini-ITX, 6-c (5836219)
I'm going to mount it and do the burn-in following this page :

I don't know if there is something more recent around but that's the first result I got using the search tool.
If anyone is interested I can post the steps and follow through with pictures
