It looked completely silly to start a very same thread although it probably would attract more reply :)
If OP has any issue with it I am more than happy to open a new thread...

As I've said it would serve as a general file server at home, a place to backup my phone & laptop on the fly, it would also download torrents and stream my music and movie collection and provide remote access for me when I need some of my clients config files working on site. I use Kodi so I probably won't use Plex.

Sorry, missed the line. So basically even an i3 is enough, so a Xeon E5 will be more than enough ;)
