I'm seeing a constant activity of 100k bytes on both the disks that I have in mirrored configuration. The HDD activity lights indicates that there is always some activity. I've even tried turning off syslog on the disks.

Is this normal ?

Or by setting up DNS correctly.

You mean solve it properly, instead of just working around it? Sorry, not following...

After turning off writing any logs by CIFS, and turning off hostname lookups, and most importantly turning off plex plugin, I'm now seeing something like the image attached.

If it is infact plex that is causing these issues, I can take it up to them. But, are the 5 minute interval spikes normal operation ?

The 5 minute spikes are normal. They are the reason there are so many threads about pools not going to sleep etc.
