I get this screen loaded (first image), selecting any of the options results the second image saying checksum verification failed. Pressing any key returns to the gnu-grub blue menu.
I am almost sure I got a different behavior/error yesterday but just cannot remember.

Any idea how to resolve this?

Do you have a backup of your configuration?

I'd probably reinstall and import the config (or reconfigure).

What is your boot device?

I suspected that this might be the case. my boot device is a usb stick. I might have some configurations backup somewhere, but probably not the most recent. Is there a way to extract the configs from the current usb (maybe corrupt) stick

I was almost certain that's the case. USB boot devices are not recommended, you should change that in the near future. A small SSD would be best.

The configuration should be backed up at every night at 03:45 automatically. It should live on the system dataset, if that's not on your boot pool you should be able to get that. Otherwise you can see if you can extract the info from the USB device once you booted from a fresh install.
