Once you have everything in one place life is so much simpler. Personally, RAIDZ2 is superior to RAID1 because of how parity versus mirrors work. When a disk fails you're relying on that other disk to be in perfect condition. If it has even 1 error when resilvering the vdev you have no way to fix it. RAIDZ2 allows your parity data to save you from the random errors that can(and often do) occur during the resilvering process.

- that something I would have never considered. It seems I've got a bit more studying to do before I post anymore. Thanks for a push in the right direction everyone.
