Better to have one Vdev or two?

In the end I'd like to have 8x3TB Red drives in my zpool. But that would require me to invest in 4 more drives right now. Is 1 Vdev in RAIDZ2 preferable over two 4 drive Vdevs each in RAIDZ1?

Also, about Vdevs vs zpools, is the zpool the partition? Will two Vdevs still show up as only one partition?

Better is relative to how you plan to use the pool. Unless you are needing high random IO, you're probably better with 1 vdev and enjoying the larger available disk space.
