Backup to usb drive and encryption

Hello everyone.
I want to have a backup of the volume made to hdd connected via usb sata adapter.
I want to encrypt the drive just in case if is lost/stolen.
How do I clone/copy the whole volume and is it possible to encrypt it as well?

Backing up via USB interface is RISKY at best.
Search the forum and you will find much evidence of this.
