I'm doing research on this but wanted to see what information I could get.

All my boxes run 256gb ram, 1.2tb l2arc 400gb zil and all I use them for is NFS storage for vmware.

9.10 works very well, very stable. I have really zero issues.

I see 11 is supposed to give more performance, but does it really?

Is it worth upgrading or don't fix what ain't broke.

Or am I missing out on a big performance bump?

Well, 11 has been out for a couple of months now without major issues. There aren't going to be further updates or security patches for 9.10 or earlier releases. And if you have issues with 11, it's trivial to revert to the previous boot environment and go back to your 9.10 install. I'd say that upgrading would be a good idea whenever you next have scheduled maintenance.
