VM/bhyve returns to install "disk"

I'm very new to VMs under FreeNAS-11.0-RELEASE (a2dc21583) but I've been using FreeNAS as a file server for quite a while. Thought I'd give this a whirl.

Set up a VM with
2 virtual CPUs,
Memory Size: 2,000 MiB,
Boot: UEFI

Created a zvol 70GiB in size at the top level of an existing volume.
Dropped the (ubuntu-16.04.2-desktop-amd64) file into an existing file system.

Created devices for the VM
DISK: my new zvol in AHCI mode
CD-ROM: pointed to the iso file
VNC: 5904
NIC: [defaults]

Fired it up, connected via tightVNC.
Ran the installation
Asks me to remove installation media (um...?)
and hit RETURN

Hitting return does nothing but if I bang on the ctrl-alt-delete button a few times, the VM will reboot.

On re-connection we have a healthy Ubuntu Desktop until we don't.

If I shut the desktop down from within Ubuntu, the VM stops. Upon starting it again, I get the CD-ROM grub installation menu. If I "remove the installation media" buy removing that device, I get UEFI Interactive Shell v2.1. No idea.

What shall I do differently to get my Ubuntu installation (still on the zvol, by the way) to load on VM start up rather than go back to the CD-ROM?

AMD 6-core CPU of some kind
32GB RAM
On a Motherboard of some kind
4 1TB snaps in a zRAID formation
(works well)

Thank you Chris. I would have not thought to look at it as an UEFI Secureboot issue. Had no clue what was wrong. All working now,
