Im currently running Freenas server in my home lab, and would like to know if it's possible to convert into TrueNAS without losing the existing pools. Thanks!

You won’t loose your pool as long as you have your configuration and data backups before migrating, but still not recommended for prime time. There’s beta2 coming out in the next few weeks. I have migrated my test pool with jails to TrueNAS CORE and it’s running fine very usable and stable but still I will not put it in production yet.

What if I have an unencrypted pool under FreeNAS and then want to encrypt it on TrueNAS or maybe only several Datasets?

ZFS doesn't encrypt pools, only datasets. To migrate existing datasets, you'll need to send/recv into a new, encrypted dataset.
