2 x Crapy 4port sata cards
4 x 1gb WD 7200rpm zfs-2
3 x 3gb WD 7200rpm zfs-1
1 x 4tb Segate 7200rpm
2 x Sabrent 1TB Rocket NVme (on route from amazing)
1 x Intel x520 SFP+ 10Gb

I guess you mean TB here. if it's GB, you won't have much space after the 2GB swap partitions are created.

Maybe the "2 x Crapy 4port sata cards" isn't very compatible with that concept. Those cards are quite likely to have Marvel SATA controller chips, which are going to fail on you sooner than you would like if using ZFS.

You would do much better to follow the advice recently given by @Yorick in this thread: https://www.ixsystems.com/community/threads/extension-pci-express-card.85385/

I'm a little scared of what you are going to do with those ...

I'm hoping it's a mirror pool to push some data through that 10G link you're building.

The Sabrent 1TB are for keeping our steam libraries on, any feedback advice is welcome!!! :)

and thank you wil look into these SATA-Sas cards now, which in your opinion is the least hassle?

Least hassle would be one that's already flashed to IT mode and P20 (or P16 for newer models) firmware. Check eBay, you should find multiple options. Most from Hong Kong.
