Best choice for my NAS

Hello everyone!

I've got a server with 8 GB RAM memory, 3 disk 1 TB each one with freenas 8.0.3 release x64. Can you tell me what type of RAID is the best option for me??
My system (specifically my HDD's I think) is not enough for a RAIDZ and should I create a UFS volume??

A RaidZ1 would be the best and you would get 1.8 GB of storage.

For spacing it all depends on what you want to store.

Also, as time goes by you can replace the 1 TB with 2 TB and double your capacity. Just remember to replace one at a time and make sure it is resilvered.

I have 1 pool of 3 x 1 TB -- may not be a lot of space but I have comfort in knowing that if one drive fails I still have the data

You can use either RAIDZ1 (with ~2T usable), or a mirror + spare. These are your only options for RAID. There is no RAID5 for UFS on FreeNAS 8.x.
8GB of RAM will be sufficient until you get more than 8T of storage. The rule is 1GB RAM per 1T of storage.
